Sit Down or I’ll Sit You Down Imperial IPA by Peticolas Brewing Co Taste Test

I’m a big fan of Imperial or Double IPAs and also a big fan of Peticolas Brewing Co.  If you’ve had Velvet Hammer then you understand why.

That being said, I was extremely happy to see this beer on tap at Lakewood Growler recently.

Here is what Peticolas says about Sit Down:

“Sit Down Or I’ll Sit You Down
Imperial IPA
10% Alcohol by volume / 90 IBUs

Back in the day, Michael Peticolas’ brother, Charlie, was a cop and COPS filmed a few of his arrests. The best of which involved a deadbeat considering resistance to his arrest. With baton drawn, Charlie demanded “Sit down or I’ll SIT YOU DOWN!” Since the episode aired over 10 years ago, we’ve uttered the line a million times to one another and laughed every time. We’re paying tribute to that line by using it to name our Imperial IPA. A big beer that will sit you down if you don’t do it first. Ha. Call it “Sit Down” for short.

As for the beer itself, the intent is to exhibit the fresh and bright character of the hops. We dry hopped it with over a pound of hops per barrel of beer. It’s gold in color and the floral ester aroma is high. The hop bitterness is high, but not at all harsh. The hop flavor is high, fresh, and lively. Yet with all of our beers, it’s all about balance and this one is no exception. The malt character is fairly high and provides a tremendously full mouthfeel. Finally, the alcohol in this beer is intentionally present (and delicious).”

I asked Michael Peticolas what his motivation was for this beer, and he said that it was honestly driven by people asking him to brew an IPA.  He said that Peticolas Brewing Co. is always as responsive as possible to requests from the market, so if there is something that you really want them to brew, just ask.  Maybe a bunch of other people are asking for the same thing.

Now on to the taste test:

Sit Down pours a hazy amber color with a good head of white foam.

You get a good dose of hops smell from a few feet away which is always a good sign from a big IPA.

The aroma of this beer is fantastic.  You get a good blend of resinous pine, bitter and grapefruit smells.  The grapefruit really jumped out to me on my second big whiff.

The flavor follows the smell pretty closely.  I got a lot of the big time hop flavor that you would expect from an Imperial IPA with the malt backbone to balance everything out.

There is a lot of pine and grapefruit initially with a good bitter bite on the finish.

I would put this beer in the medium range for carbonation, so that helps the crispness of the finish and the good mouthfeel.

I kept searching for different types of fruit flavor in this beer, but I keep getting stuck on grapefruit.

I really like this beer and definitely recommend that you grab some if you get the chance.
